Internationally acclaimed flavour-maker, David Tsirekas, has introduced two of his signature dishes – Pork Belly Baklava and Ancient Salmon (recipes below!).

Drawing inspiration from his journey of understanding authentic Greek fare – by reading ancient literary texts – David’s signature dishes balance traditional Greek food with a much-loved contemporary spin and sense of fun.  My signature dishes focus on tradition while still being contemporary and fun, and hero everything that is celebrated about Greek cuisine: produce, quality, seasonality and freshness.”

This week Nostimo took the title for Best Greek Restaurant Award at the 2018 Queensland & Northern Territory Savour Australia Restaurant & Catering Hostplus Awards for Excellence.

With an internationally trained and renowned chef at the helm of a team of passionate and extremely skilled staff, the award comes as no suprise. Meet Our Chef In Residence

Delicious news! Nostimo Restaurant Bar is delighted to introduce to you our chef in residence, the renowned David Tsirekas.

David joins Nostimo Restaurant Bar with a wealth of culinary expertise, in particular his role as group executive chef for Universal Hotels which has its famous flagship Greek restaurant, 1821, in Sydney. David was awarded his first Sydney Morning Herald Good Food Guide hat in 2001 for his work at Perama restaurant. Since then, David has received numerous hats and accolades celebrating his mouth-watering cuisine.


Nostimo Banquets to the Rescue

Upon the opening of our new on-site restaurant, Nostimo Restaurant Bar, we are excited to introduce a delicious new Greek Banquets menu. Think saganaki cheese dressed in caramlised figs, or Pork Karameles- skewered pork belly served with mustard mayo, tomato, onion and parsley.

With options to suit everyone, indulge in this delicious new menu created by our chef in residence, David Tsirekas. Nostimo Restaurant is taking Greek in Brisbane to the next level by keeping to the traditional and authentic flavours and adding a modern twist.

Meet Nostimo’s Restaurant Manager Kostas

Kostas Manekas has recently joined The Greek Club team as Nostimo Restaurant Bar manager. Born and trained in Greece we asked Kostas to give us a bit of an insight on his life growing up and how his past has led him to The Greek Club’s Nostimo. 

“Leaving Greece almost 8 1/2 years ago to settle in Brisbane, I am now married and have 2 year old son. I have been involved in the hospitality industry for almost 20 years, starting at the age of 12 in my parents’ Taverna back in Greece.
