Soutzoukakia Recipe

If you haven’t had the pleasure of dining at Nostimo Restaurant Bar in the last month then you wouldn’t have tried the delicious soutzoukakia dish on the menu. Delicious, packed with Mediterranean flavours and covered in a rich and thick tomato sauce, this is a warming and extra hearty Greek dish, perfect for a cold evening!

Ingredients

4kg pork mince
2kg beef mince
4 brown onions
1 tablespoon garlic puree
extra virgin olive oil
2 cups rice
3 ½ cups water
1 tablespoon smoky paprika
1 tablespoon cumin
1 tablespoon cinnamon
½ tablespoon cloves ground
1 bunch parsley
1 bunch dill
1 bunch mint
salt and pepper
½ cup red wine
Tomato Puree

Method

  1. Brunoise onions and sweat off with garlic in olive oil.
  2. Boil the rice and set aside to cool.
  3. Mix in all the mince with spices and chopped herbs and add in the wine.
  4. Once the rice and onions have cooled add to mince mixture.
  5. Mix well and form into 50-60g balls.
  6. Place in oven proof dish and cover with a tomato puree.
  7. Cover with baking paper and foil and cook for around 30 mins at 210 degrees Celsius. Check the middle ones to see if cooked.
  8. Serve and enjoy.

I have been a chef since 1997- 21 wonderful years!

What is the best part about working at Nostimo Restaurant Bar?
My favourite part about working at Nostimo is having the opportunity to change the way the Greek cuisine is known in Brisbane. I love being able to do this with such a friendly and hard working team of chefs by my side.

What is your favourite dish at Nostimo Restaurant Bar?
My favourite dish would definitely have to be Lamb Shoulder Kondosouvli! The wilted spinach and herbed yoghurt are the perfect accompanies to a great dish.

What has been the most rewarding experience about being a chef?
The travel and the excitement I get everyday at service time. I love seeing how happy my customers get when they eat my food.

If you could only make one dish for the rest of your life what would it be?
Linguine Vongole- the ultimate Italian dish served with delicious clams. YUM!

With options to suit everyone, indulge in this delicious new menu created by our chef in residence, David Tsirekas. Nostimo Restaurant is taking Greek in Brisbane to the next level by keeping to the traditional and authentic flavours and adding a modern twist.

Saganaki with caramalised figs
Dolmades
Fried calamari with ouzo mayonnaise

Dessert Bougatsa of Thessaloniki served with strawberry coulis, macerated mixed berries

 

The Nostimo Banquet is just $58 per person and is designed to be enjoyed by the whole table and parties exceeding 12 guests (minimum 4 guests).

Strapped for time? Try our Express Lunch Banquet, available 11:30am – 3:00pm Monday – Saturday. Perfectly designed to fit in with your lunch break, our Express Lunch Banquet has a selection of Nostimo signature dishes. At just $30 per person, this banquet is designed to be enjoyed by the whole table and parties exceeding 12 guests (minimum 4 guests).

Looking for something different? Take your meeting to the next level with Nostimo’s private dining room. Seating up to 12 people this is the perfect break out space from your office or even our function spaces. With a ceiling of over 10, 000 cascading koumboli (worry beads), there won’t be a worry in sight while dining.
