Soutzoukakia Recipe

If you haven’t had the pleasure of dining at Nostimo Restaurant Bar in the last month then you wouldn’t have tried the delicious soutzoukakia dish on the menu. Delicious, packed with Mediterranean flavours and covered in a rich and thick tomato sauce, this is a warming and extra hearty Greek dish, perfect for a cold evening!

Ingredients

4kg pork mince
2kg beef mince
4 brown onions
1 tablespoon garlic puree
extra virgin olive oil
2 cups rice
3 ½ cups water
1 tablespoon smoky paprika
1 tablespoon cumin
1 tablespoon cinnamon
½ tablespoon cloves ground
1 bunch parsley
1 bunch dill
1 bunch mint
salt and pepper
½ cup red wine
Tomato Puree

Method

  1. Brunoise onions and sweat off with garlic in olive oil.
  2. Boil the rice and set aside to cool.
  3. Mix in all the mince with spices and chopped herbs and add in the wine.
  4. Once the rice and onions have cooled add to mince mixture.
  5. Mix well and form into 50-60g balls.
  6. Place in oven proof dish and cover with a tomato puree.
  7. Cover with baking paper and foil and cook for around 30 mins at 210 degrees Celsius. Check the middle ones to see if cooked.
  8. Serve and enjoy.
